Thanksgiving, Friendsgiving and Christmas dinner

Thanksgiving dinner timeline planner

Tell the planner when you want to sit down, what you’re roasting and which sides you’re making. It works backwards to when the turkey has to start thawing, when it goes into the oven and comes out, when each side dish goes in, where two dishes would want the oven at different temperatures, and what to make the day before. For a 16 lb turkey served at 4:00 pm on Thanksgiving, Thursday 26 November 2026, that means thawing from Sunday morning and the bird in the oven at 11:05 am.

How the timeline is worked out

The planner starts at the moment you want to eat and counts back, one stage at a time.

  • Carving and resting. The roast has to be out of the oven before it can be carved. USDA’s Food Safety and Inspection Service (FSIS) says to let a turkey stand for 20 minutes before carving, and beef, pork, lamb and raw ham for at least 3 minutes. On top of that comes the time you need to carve and get everything to the table: 20 minutes in the example.
  • Roasting. The time in the oven comes from the FSIS charts: the 325 °F turkey timetable by weight, and FSIS’s roasting charts for ham, beef, pork and lamb. Each chart gives a range. The planner puts the roast in early enough for the longer end, and tells you to start checking with a thermometer at the shorter end.
  • Preheating. Your oven’s preheating time goes before that, which is also the moment to take the neck and giblets out of a turkey.
  • Thawing. A frozen turkey needs about 24 hours in the refrigerator for every 4 to 5 lb, so the planner counts back in days and gives you a date to start. Cold-water thawing is faster, about 30 minutes per pound, and happens on the day.
  • Side dishes. Each side is placed as late as it can go so it comes out hot, then moved a few minutes earlier if the oven or the stovetop is busy.

Times are rounded down to the nearest 5 minutes, and thawing starts to the nearest quarter hour, so rounding always gives you a little more time, never less.

Fitting the side dishes into one oven

Oven timeline for the example: the turkey at 325 °F from 11:05 am to 3:20 pm, then four side dishes at 350 °F during the 40 minutes of resting and carving before dinner at 4:00 pm 11 am12 pm1 pm2 pm3 pm4 pm dinner Oven Turkey at 325 °F (163 °C) 16 lb: 3¾ to 4¼ hours · in 11:05 am · check from 2:50 pm stuffing, 40 minsweet potatoes, 30green beans, 30rolls, 10 350 °F
The example plan: once the turkey is out at 3:20 pm, the oven is free for 40 minutes of resting and carving, so it goes up to 350 °F for the stuffing, sweet potatoes, green beans and rolls.

A turkey holds the oven at 325 °F for hours, and most casseroles want 350 °F or more. Two dishes can share an oven only at the same temperature and only if there is room for both, so the planner keeps to two rules.

  1. A side can bake next to the roast only at the roast’s temperature, and only if the space adds up.
  2. While the roast rests and is carved, the oven is free. If a side fits into that window, it goes there, and the running order tells you when to turn the dial up.

Oven space is counted in dishes: a standard oven with two racks holds about four. A large turkey in its roasting pan usually takes the whole oven, so the example gives it all four. If you have a double oven, set “Ovens” to 2 and the second one takes whatever doesn’t fit in the first.

When a dish can’t be fitted, the running order marks it as a clash and says why, with suggestions: lengthen the rest-and-carve window, bake it at the roast’s temperature if the recipe allows, let some sides finish a few minutes early, make it ahead and reheat it to 165 °F (73.9 °C), or use a second oven. Stovetop dishes are checked against your number of burners in the same way.

A worked example: 16 lb turkey at 4:00 pm on Thanksgiving

This is the plan shown above, for a 16 lb (7.3 kg) frozen turkey, unstuffed, with dinner at 4:00 pm on Thursday 26 November 2026.

  1. 16 lb falls in FSIS’s 14 to 18 lb row: 3¾ to 4¼ hours at 325 °F (163 °C).
  2. 4:00 pm, less 20 minutes to carve and 20 minutes’ rest, means the turkey must be out by 3:20 pm.
  3. 3:20 pm less 4¼ hours puts it in the oven at 11:05 am. Start checking at 2:50 pm, 3¾ hours in.
  4. Preheat from 10:45 am, and take out the neck and giblets.
  5. Thawing 16 lb at 24 hours per 4 lb takes 4 days, so it goes into the refrigerator by Sunday 22 November at 10:45 am. Starting a day earlier is fine: a thawed turkey keeps for 1 to 2 days in the refrigerator.
  6. Leftovers go into the refrigerator by 5:20 pm, two hours after the turkey comes out.

Common timeline mistakes

  • Starting to thaw too late. Refrigerator thawing can’t be hurried, and FSIS warns against thawing on the counter: the outside of the bird sits between 40 °F and 140 °F, where bacteria multiply quickly, while the middle is still frozen. If you’re short of time, the turkey thawing calculator covers cold water and cooking from frozen.
  • Going by the clock or the pop-up timer. The chart is approximate. FSIS recommends checking with a food thermometer even when the turkey has a pop-up indicator: 165 °F (73.9 °C) in the innermost part of the thigh and wing and the thickest part of the breast.
  • Stuffing the bird to save oven space. A stuffed turkey takes longer, and the centre of the stuffing must reach 165 °F as well. FSIS recommends baking stuffing in a casserole dish for more even cooking.
  • Putting every dish in at the same time. Several casseroles at 350 °F next to a turkey at 325 °F won’t both cook as their recipes say. Use the rest window, a second oven or make-ahead dishes instead.
  • Leaving the food out. FSIS says to throw away turkey, stuffing and gravy left at room temperature for more than 2 hours, or 1 hour above 90 °F (32 °C). The running order ends with a “leftovers in the refrigerator” time; tick the hot-room box for a summer Christmas.

Christmas dinner, Friendsgiving and other roasts

Christmas Day 2026 is Friday 25 December: the date button fills it in. Choose a ham, a beef rib roast, pork or lamb as the main roast and the planner uses FSIS’s times for that cut; the roast cooking times page has the full charts. In the UK, the Food Standards Agency has its own rule for turkey, timed per kilogram at 180 °C, and the turkey cooking time calculator works out both.

For a Friendsgiving potluck, add the dishes your guests are bringing as “No cooking”, or give them a reheating slot in the oven if they arrive cold. Once the times are settled, the table setting guide and the seating planner look after the table.

Questions

How far ahead should I start thawing a turkey for Thanksgiving?

In the refrigerator, allow about 24 hours for every 4 to 5 lb (FSIS). A 16 lb turkey needs about 4 days, so for an 11:00 am roast on Thursday 26 November 2026 it goes in the refrigerator by Sunday 22 November. A 20 lb turkey needs about 5 days.

What time should the turkey go in for a 4:00 pm dinner?

It depends on the weight. An unstuffed 16 lb turkey takes 3¾ to 4¼ hours at 325 °F (FSIS). With 20 minutes’ rest and 20 minutes to carve, it must be out by 3:20 pm, so it goes in at about 11:05 am. Change the weight above to see your own times.

How do I cook the side dishes when the turkey is in the oven?

Bake them at the turkey’s temperature if the recipes allow it, or bake them while the turkey rests and is carved, when the oven is free and can be turned up. The planner does this for you and marks anything that doesn’t fit, with ways to make it fit.

Can I make side dishes the day before?

Yes. Cool them, then refrigerate them in shallow containers within 2 hours, and reheat them to 165 °F (73.9 °C) before serving (FSIS). Tick “Make ahead” on a dish and the planner lists it for the make-ahead day and schedules its reheating.

Does the timeline work for Christmas dinner or a ham?

Yes. Choose the date (Christmas Day 2026 is Friday 25 December), then a ham, a beef rib roast, pork or lamb as the main roast. The times come from FSIS’s charts for that cut, and the planner won’t guess a time for a weight outside the chart.

How long can Thanksgiving dinner sit out?

No more than 2 hours at room temperature, or 1 hour above 90 °F (32 °C). After that FSIS says to throw away turkey, stuffing and gravy. Refrigerate leftovers in small, shallow containers and use them within 3 to 4 days.
